In 2012, while sitting in a bar in the Philadelphia suburb of Newtown, PA, inspiration sort of hit me over the head. My friend Steve and I were discussing
what made a good hot sauce. He had recently tried a tomato-based pineapple habanero salsa that he thought was pretty good. That got the gears turning. I had always
been a fan of flavorful sauces and decided I could run with that idea. I started playing around with different base flavors and pepper combinations and settled on a mixture
that tasted great and had a good heat level without being overpowering. The only problem was that the heat hit at the same time as the flavor. I wanted to be able
to taste the fruit first and then get the heat. A lot of experimentation and fruit and peppers and spices and juices later, I came up with the first version that really
hit all the points I wanted. I had created a pineapple-mango salsa with a unique combination of chili peppers, juices, spices and other ingredients that gave the rush of
fruit flavor followed by a pleasing level of heat. I started kicking around a number of names for the sauce. It was my son who suggested Tropic Fire, and the rest was
history.
Fast-forward 4 years. After moving to Florida and making a few batches to share with friends at work, the nearly unanimous call came out for me to produce my salsa commercially. I didn't have access to a commercial kitchen, so the thought languished until I found a co-packing company in Daytona Beach who was willing to work with me on recipe development for large batches. It was they who suggested that I convert my salsa recipe into a sauce. I worked with them to faithfully reproduce the flavor profile of my salsa. Then I worked with a local artist to develop the logo and labels. A local printer made the labels and sent them to the co-packer. then, on July 15th, 2020, Tropic Fire Pineapple Mango Chili Pepper Sauce made its debut.
We're not standing still. While the Pineapple Mango Chili Pepper Sauce is our first product, it's just that. We've got plenty of ideas and a few products already in the pipeline.
